Chef Apprenticeships
Certificate III in Commercial Cookery

Cooks and chefs prepare and present food. They work in a variety of places including hotels, restaurants, cafés, hospitals and catering businesses. As an apprentice chef, you will probably be required to do shift work or “split shifts”, weekends and public holidays. Apprenticeships generally last three years and employment prospects are excellent within Australia and overseas.

School Based Apprenticeships
Certificate III in Commercial Cookery

If you are in years 11 or 12 you can start an apprenticeship while still at school. You can develop skills and get paid while getting ready for a career, as well as working towards secondary graduation and an industry recognised qualification. Both off the job and on the job training parts of school based apprenticeships are completed during school hours, however work times may be extended to accommodate the workplace. Students attend the workplace one day a week, TAFE one day a week and the rest of the working week (3 days) at school.

What is an Apprenticeship?

An apprenticeship is a training contract between an employer and an employee in which the apprentice learns the skills needed for a particular occupation or trade. An apprenticeship or traineeship can be undertaken on a full-time or part-time basis and can be used as a valuable stepping stone to start a career in an industry you want to work in.

As an apprentice you can:
  • learn valuable, nationally recognised job skills
  • get paid while learning
  • combine formal training from a training college with workplace-based training

An apprenticeship or traineeship is a great way of building up knowledge and skills, gaining nationally recognised qualifications and you will earn while you learn. Apprentices do real jobs for real employers. So you’re paid while you learn and you will start earning from day one of your Apprenticeship.

Customer service is the core of the hospitality industry. Even people in jobs that don’t have direct guest contact are supporting guest service.

To work in hospitality you also need:

  • A genuine interest in the hospitality industry
  • Ability to work as part of a team, plan your time, and use your initiative
  • High level of personal cleanliness and hygiene
  • A passion for food and cooking
  • Be organised, prepared, adaptable, creative, disciplined, hard-working, and open to flexible working arrangements (including shift work)
  • Good communication and people skills
  • Ability to stay calm in difficult situations
  • Ability to stand for long periods of time, lift heavy pots, and work in close proximity with other people
  • Enjoy change and be able to think on your feet

Why do I need a trade certificate?

A trade certificate qualification gives you the confidence to go into a job knowing you’re well equipped to do the job well. It also inspires confidence and reassurance in your employer that you have followed the apprenticeship pathway and have been trained accordingly. A trade certificate could mean the difference between securing a job or not. Should you wish to travel you can also take your trade certificate with you to show that you are a qualified chef.
